These chicken dishes are EASY to whip up and require 1 pan. Does it get better than that?? Full disclosure, these aren’t much to look at but I know I’m always looking for new flavor profiles, easy and fast meals, and the fewer dishes I can use for cooking the better!

When I make these dinners I use a second pan and make broccoli as a side. For the broccoli (pictured in the first recipe) just throw it on a pan and toss it with olive oil before seasoning with salt and pepper. When you put the chicken in the oven as instructed below stick the broccoli in too. You can pull the broccoli out when the chicken is all finished.

For the chicken in each recipe, toss the pieces on a sheet pan and season with salt and pepper unless otherwise noted (Chicken Bacon Ranch and Chicken Parm). Put the chicken in an oven which has been preheated to 425 for 30 minutes. After the 30 minute cooking time, turn the oven off, remove the chicken, and make the chicken you want below!

Chicken Cordon Blue

Ingredients

  • chicken (boneless skinless breast or thighs)
  • honey mustard
  • ham
  • swiss cheese

ingredients for chicken cordon blueOnce the cooked chicken is removed from the oven smother them with honey mustard, then ham, and finally cheese. Pop the sheet pan back into the oven for 3-5 minutes or until the cheese is melted.

Spicy Chicken

Ingredients

  • chicken (boneless skinless breasts or thighs)
  • Frank’s Red Hot
  • 1/2 stick butter
  • provolone cheese
  • ranch

spicy chicken ingredients While the chicken in cooking melt the butter in a bowl, add hot sauce according to taste.

Once the cooked chicken is removed from the oven dip each piece into the butter/hot sauce mixture, coating well. Return to the sheet pan and top with cheese. Pop the sheet pan back into the oven for 3-5 minutes or until the cheese is melted. Serve with ranch.

Chicken Bacon Ranch

Ingredients

  • chicken (boneless skinless breasts or thighs BUT thighs work best)
  • powder ranch mix
  • bacon
  • shredded cheese

ingredients for chicken bacon ranchFor this recipe BEFORE the chicken goes in the oven season it with the ranch powder packet.

chicken covered in ranch powderUse the whole packet, even if it seems excessive. Place the raw bacon on the seasoned chicken and place it in the oven to back according to the directions in the beginning of this post. The bacon might need more than 30 minutes to cook, which is why thighs are actually better for this recipe. They don’t dry out as easily.

Once the cooked chicken is removed from the oven top with shredded cheese. Pop the sheet pan back into the oven for 3-5 minutes or until the cheese is melted.

Peanut Chicken

Ingredients

  • chicken (boneless skinless breasts or thighs)
  • peanut sauce (I use House of Tsang)
  • peanuts

Once the cooked chicken is removed from the oven top with sauce and peanuts.

Chicken Parmesan

Ingredients

  • chicken (boneless skinless breasts or thighs)
  • marinara sauce
  • parmesan cheese

ingredients for chicken parmesan For this recipe BEFORE the chicken goes in the oven season it with the parmesan cheese.

Once the cooked chicken is removed from the oven smother them with marinara and cheese. Pop the sheet pan back into the oven for 3-5 minutes or until the cheese is melted.

There you have it! An easy one pan chicken recipe you can quickly doctor up and make 5 different versions of. They might not be fancy but they all taste good and are a great addition to the dinner rotation.
