I’m ALL about quick and easy dinners, this one takes the cake. In less than 30 minutes with only 4 ingredients (plus a few standard pantry items) this has quickly becomes one of my favorite week night meals. For this post I made dinner for 2 adults, 1 teenager, and 1 toddler there was plenty of food without too much leftover, we never seem to get around to eating leftovers so I try to tow the line between having enough to feed everyone and not having more than 1 serving of leftovers.
Ingredients
- steak (I use whatever I find on sale at the grocery store OR whatever is hanging out in the freezer, for this I used a little over a pound of top sirloin)
- bag of fresh broccoli (32 oz)
- beef stock (3 cups)
- uncooked rice (1 1/2 cups)
Organized Cooking is Easy Cooking
I try to stay organized when I cook, which starts with gathering everything I need before I start cutting and prepping. If I’m having a REALLY organized and efficient day I also start with an empty dishwasher so I can load things as I go and not have to do it when I’m done cooking and/or eating. It’s a good trick when I do it but sometimes just piling everything on the counter and dealing with it later wins out.
The items I use to make this recipe are…
- rice maker
- measuring cups
- baker half sheet pan, if you don’t own baker half sheet pans pick these up immediately, they aren’t fancy but they get the job done
- aluminum foil
- skillet
- tongs
- knife
- cutting board
Prepare Ahead
Before I start preparing any dish with meat I pull the meat out of the fridge and let it sit in the sink to come to room temperature. After 20-30 minutes of letting the meat sit out I start cooking.
Cooking the Broccoli
The first thing to get going with this recipe is the broccoli. Preheat the oven to 375, line a sheet pan with aluminum foil, and dump the broccoli from the bag onto the pan. I like to break up any really large pieces to help everything cook evenly. Once you’ve done this pour some olive oil over the broccoli and season. I use garlic salt but just throwing salt and pepper on is also great and easy. Once you’ve seasoned give everything a toss, either with your hands or by shaking the pan, and toss it into the oven. Bake for 20-25 minutes.
Cooking the Rice
Up next is the rice. After you pop the broccoli into the oven get your rice started. Since I have a rice maker, this is easy and doesn’t require any attention. I measure out 1 1/2 cups rice and add it to the rice maker then measure 3 cups of beef stock and pour it over the rice. I give it a little shake, pop the lid on, plug it in, and turn it on. From there I just wait for the switch to go from “cook” to “warm”. Once the rice maker switches to “warm” I season with salt and pepper and stir. Cooking the Steak
The final cooking step is for the steak. Pour about a TBSP of olive oil into a skillet and put it over medium high heat. Season the beef with salt and pepper and add it to the pan. The cook time on this depends on how you like your steak, I like mine right next to raw so it only takes a minute or two for me but here is a chart to help you with cook times, if needed. Once the steak is cooked I transfer it to the cutting board and let it rest for a few minutes then slice is into bite size pieces. If I need to cook it a tad more for any family members I usually take the cut pieces, toss them back in the pan and heat them a bit more.
